Easy creamy parsley dressing (vegan, gluten free)

This easy, super creamy and refreshing parsley dressing is whipped up within no time. And the best part: there’s only 5 ingredients in there! It’s great over salads, in a tortilla wrap, as dipping sauce and with so much more.

Every time when I buy parsley, whether it’s a bunch or as a plant, I hope to enjoy it for the rest of the week, but it’s always dead after a day. A DAY!! Even though I gave it water and my love. Can you relate? I really don’t get why it happens to me every single time. You know what? I’m gonna plant some parsley in my garden right now (YAY TIM AND I GOT A NEW HOUSE WITH GARDEN). BUT: if you don’t happen to have a garden or balcony or you just don’t want to plant parsley, this might be a solution for the dead parsley: you can make an AMAZING dressing out of it. Five ingredients and you’re done (I didn’t count the salt as ingredient). That easy?! Yes, that easy.

All you need is a bunch (dead) parsley, plant yoghurt, 2 limes, a jalapeño, a clove of garlic and some salt. That’s it! Don’t be frightened by the jalapeño, because this dressing isn’t that spicy. It’s actually not at all, so if you like spice, feel free to add two of those gorgeous green peppers to your blender.

So to make this all a smooth, creamy dressing, I used a blender. If you don’t have one, you can definitely use a food processor or hand blender. All of them work great. Just keep blending until you get a super smooth dressing.

Oh and I used an unsweetened soy yoghurt, but you can definitely use any unsweetened plant yoghurt you have on hand. If you don’t want to use yoghurt at all, you could soak some cashews overnight and blend them until smooth. As long as the dressing will be creamy 🙂 Here’s the recipe!

Ingredients

  • 1 bunch parsley
  • 250 ml or 1 cup plant yoghurt unsweetened
  • 1-2 jalapeño peppers
  • 2 limes
  • 1 clove of garlic
  • 1/2 tsp salt

Instructions

  1. Juice the lemons and remove the seeds from the jalapeño pepper. Use two peppers for more spice. The real heroes out there can obviously add the seeds to this dressing if they want.
  2. Add all ingredients to a blender, food processor or hand blender and blend until smooth and creamy.
  3. Enjoy! If you leave it in the fridge in a closed jar for a night, it will be this kind of crème. I think this is very nice, but runny is perfect too.

Recipe Notes

Store in a closed jar in the fridge up to a week.
